This is a really lovely, gooey chocolate cake that's quite brownie-like, and very indulgent.





The topping may differ from the one shown, but let me know if you have any preferences.

This chocolate cake contains:
self-raising flour
chocolate with 60% cocoa solids
freerange eggs
baking powder
butter
light muscovado sugar
caster sugar
cocoa powder
buttermilk
double cream
coffee

It'll keep for 2-3 days, and there are 541 calories per serving (based on 14 servings, which may seem like a lot, but it's so deliciously rich that you probably won't want too much, unless you're greedy that is...), which is actually quite low, because you only need a little bit to satisfy.

A light, spongy, sharp, lemony cake. I can pour lemon juice and caster sugar straight onto the cake whilst it's still warm so it goes a bit squidgy and even more lemony (as in photo), or I can use icing sugar instead and make a more traditional lemon drizzle topping with candied lemons on top. It's up to you.

This one'll keep for 2 or 3 days, and there are 706 calories per serving, based on 8 servings.

This one's quite an old fashioned little number. The cake is made with 1/2 pistachio nuts to 1/2 flour, so has a lovely oily nutty taste, and a bit of cardamom and rose water to give it a romantic edge. If you know what I mean...

This Pistachio and Rose Water cake contains:
pistachio nuts
self-raising flour
freerange eggs
cardamom seeds
caster sugar
butter
baking powder
milk
rosewater
double cream
fresh strawberries

If you go for the double cream and strawberry topping, it'll have to be eaten on the same day (shame) as it's made, otherwise the cream will go mouldy.

There are 880 or 560 calories per serving, depending on whether you go for 6 or 8 servings.

The humble, healthy (if you don't eat the topping, which would be silly) carrot cake - my husband Ben's favourite. Thankfully this one didn't disappoint - and I think it'll be a close second to the chocolate cake in the cake popularity polls.


This carrot cake contains:
free range eggs
light brown sugar
sunflower oil
self-raising flour
baking powder
carrots
apple
flaked coconut
walnuts
cream cheese
icing sugar

It'll keep for ages if you store it in the fridge (we've had one in our fridge for about a week now, and it's getting better every day, but eventually, the cream cheese in the topping will go off and it'll dry out too much), and there are 555 calories per serving with the topping, or 407 without the topping (based on 1o servings).
